The birth of the Zampone dates back to 1511:
the troops of Pope Julius II Della Rovere were engaged in the siege of Mirandola, a town near Modena. The Mirandolese were by now close to surrender, only pigs remained; an idea then came to one of the cooks: "Why not slaughter the animals and keep the meat inside a shell obtained from the skin of its paws?" In this way, in fact, the meat did not rot and was used and cooked later.
Towards the beginning of the 19th century, the production of this food increased, making it a symbol of the Modenese tradition, until, in 2001, the creation of a Protection Consortium to promote and protect this unique excellence.
Zampone di Modena IGP has the typical shape of the pig's front leg, is soft to the touch and has compact red to pink slices. It also has a very aromatic and intense flavor; as regards cooking, in this pre-cooked type, it is sufficient to immerse the bag in cold water for about 30 minutes.
We offer it in packs of about 1 kg, gluten-free, without added glutamate and without milk derivatives. It will be delivered vacuum packed, with box and label.
Tips & Pairings:
It can be enjoyed together with lentils and beans during the holidays, or with a good mashed potatoes from Bologna PDO, but perhaps the most famous recipe is Zampone di Modena IGP on a bed of cabbage flavored with orange with Balsamic Vinegar of Modena IGP.
As far as wine is concerned, the same goes for Cotechino Modena Igp: since these are fatty and greasy products, there is a need for a young sparkling wine with good acidity that "cleans" the palate.
The ideal choice is certainly Lambrusco di Sorbara.
