Rice of the Po Delta I.G.P. Carnaroli
Rice is one of the oldest food plants and is native to Southeast Asia.
The introduction in Italy seems to have occurred first in the south by the Arabs and the Spaniards.
Rice cultivation in the Po Delta dates back to 1400, although extensive and organized production only developed in the 16th century, thanks to the Este family, who managed to exploit the marshy lands that would otherwise have remained abandoned.
Carnaroli rice from Delta del Po Igp has a large, crystalline, compact grain with a high protein content.
The culture media are characterized by a slow draining capacity and high salinity;
they are also endowed with high mineral fertility, in particular potassium.
These characteristics give the rice a particular aroma and flavor, greater resistance to cooking and a high protein content of the grain.
