History:
The production area of Provolone Valpadana includes the entire province of Piacenza, as far as Emilia Romagna is concerned. This excellence was born in the second half of the nineteenth century, thanks to the union between the culture and the dairy tradition of the southern "pasta filata" and the great vocation in the sector of the Padana Valley. In 1861, thanks to the Unification of Italy, many entrepreneurs moved to the north with their business, transferring their knowledge and production skills regarding Provolone, creating a new dairy culture throughout Italy. The name "Provolone" appears for the first time in 1871 in the Canevazzi-Mancini Agricultural Vocabulary, meaning a large and original provolone, distinguished by its ability to age for a long time without drying too much.
Precisely for this uniqueness and for its link with the production area, in 1996 it received the European DOP certification.
Product description:
The Provolone Valpadana Dop Piccante that we offer is a semi-hard cow's milk cheese with a half-moon shape of about 300 gr, with a smooth and fairly thin rind of a dark yellow color tending to golden and with a lighter yellow compact paste. It has an aromatic and characteristic scent, with an intense but never rude, refined and persistent taste.
It will be delivered vacuum packed and ready to cut.
Tips & Pairings:
It is delicious when accompanied by bread or fruit, but already having an unmistakable flavor, it is also very popular cut into cubes as a salad dressing or eaten "alone"
It lends itself well to fish and meat main courses, we recommend accompanying white and red wines with good structure, which contrast but do not overpower the slightly spicy flavor of the cheese.
