History:
The origins of Parmigiano Reggiano date back to the Middle Ages and are generally placed around the 12th century.
The first dairies, called caselli, appeared in the Benedictine and Cistercian monasteries of Parma and Reggio Emilia:thanks to the abundance of streams and large pastures, the production of a hard cheese, obtained through the processing of milk in large boilers, soon spread in this limited area of Emilia.
Parmigiano Reggiano is made today with the same ingredients of nine centuries ago, in the same places, with the same skilful ritual gestures.
The cheesemakers, today as in the past, continue to produce this cheese with the precious milk of the area of origin, natural rennet, salt and no additives, in an artisanal way and with the same passion and loyalty.Product description:
Parmigiano Reggiano DOP aged 24 months obtained exclusively from the milk of Reggiana cows which, as the name implies, was originally bred in the province of Reggio Emilia, the real cradle of Parmigiano Reggiano. It is a fine milk, because it is more digestible and richer in nutrients than that of the Friesian breed.The Parmigiano Reggiano Dop Vacche Rosse selected by us is a crumbly and grainy cheese, rich in taste. It has a straw yellow color, more intense than that of classic Parmigiano Reggiano: this is due to the feeding of the animals themselves, which includes only the grasses and hay of the meadows of the Reggio province, rich in essences. Vacche Rosse aged 24 months is sweet and intense but never spicy: unmistakable.

The Parmigiano Reggiano Vacche Rosse aged 24 months that we offer is a cheese suitable for any occasion. Excellent if cut into flakes and combined with Traditional Balsamic Vinegar of Modena, but it is also perfect for grating on pasta dishes, risottos or salads. As a food-wine pairing, we recommend a still or sparkling red wine but not excessively structured, such as Sangiovese, Lambrusco or Gutturnio Piacentino.
