The origins of Parmigiano Reggiano date back to the Middle Ages and are generally placed around the 12th century.
The first dairies, called caselli, appeared in the Benedictine and Cistercian monasteries of Parma and Reggio Emilia:
thanks to the abundance of streams and large pastures, the production of a hard cheese, obtained through the processing of milk in large boilers, soon spread in this limited area of Emilia.
Parmigiano Reggiano is made today with the same ingredients of nine centuries ago, in the same places, with the same skilful ritual gestures.
The cheesemakers, today as in the past, continue to produce this cheese with the precious milk of the area of origin, natural rennet, salt and no additives, in an artisanal way and with the same passion and loyalty.
Parmigiano Reggiano Dop aged 60 months is certainly an excellence: over 5 years of seasoning make it a fantastic product. Highly digestible and suitable for those who are lactose intolerant, it is very rich in easily assimilable elements. Parmigiano Reggiano aged 60 months is certainly a fine cheese for those looking for a cheese with a strong, very intense taste and to be discovered, with a range of evolved scents: in fact, a marked minerality appears, unobtainable in Parmigiano Reggiano of minor ripening .
Tips & Pairings:
It is usually used by grating it on pasta, soups and risottos or together with dried fruit such as walnuts. Also very interesting if used in aperitifs together with other types of Parmigiano Reggiano Dop. Given its long maturation and its strong flavor, we recommend combining mainly a full-bodied and structured red wine, which manages to "hold its own" to such an intense cheese.
