The olive tree is a characteristic plant of the Mediterranean scrub vegetation of the Romagna hills, since prehistoric times.
The production of olive oil in the Brisighella area has very ancient origins, confirmed by the discovery of a small family-use oil mill dating back to Roman times.
Written evidence of the olive-growing activity in the production area can be found starting from documents and notarial deeds of the 15th - 16th century, up to texts from the last century.
Extra virgin olive oil obtained from olives of the Nostrana di Brisighella variety, harvested directly from the tree in the period between 5 November and 20 December of each year and cold extracted.

Its characteristics are exclusive and recognizable, the aroma is intense and delicate with notes reminiscent of green artichoke and freshly cut grass. .

Very precious oil, its use is often reserved for the dressing of refined dishes.
Fluid on the palate, the sweet, bitter and spicy notes are present in a balanced and harmonious way.
Among the food pairings, it excels on fish, meat and game, but also for flavoring raw vegetables and salads.
