The origins of Mortadella are presumably identifiable in the Felsina Etrusca, an area rich in farmed and wild pigs. Initially it was considered a product suitable for nobles and rich bourgeois, given the higher cost than other cured meats; over the years, following the development of the charcuterie industries in the 19th century, the product begins to spread more and more to the entire population.
Mortadella is undoubtedly the most famous salami of the Bolognese tradition and, outside the regional borders, it is often called "La Bologna". Over the years, Mortadella Bologna has become the symbol of the Bolognese production of cured meats, so much so that since 1998 it can boast the Protected Geographical Indication designation.
It is perhaps the best known and loved Bolognese sausage anywhere, but if you want a good and genuine Mortadella, you must choose the Bologna IGP, unmistakable for its pink color, its cylindrical shape and its intense aroma. It stands out from many of its other "colleagues" for its delicate flavor and its high digestibility. Of the Mortadella that we propose we note that "one slice leads to another", without ever reaching sickly flavors.

Mortadella Bologna can really be consumed in many ways, but enthusiasts prefer to taste it alone in the famous "mortadella" sandwiches, or in cubes .
Unmissable in aperitifs paired with cheeses and other typical cured meats, but also widely used in the kitchen, creating renowned dishes for all tastes.
We recommend pairing with wines that are not too tasty but capable of bringing out the unique flavor of this salami in the mouth, such as a Pignoletto or a Lambrusco di Sorbara.
