Subsequently, the legislators of the Este seigniory dictated strict rules for the packaging of bread , for its conservation and for the identification of the producer: it is none other than the size of bread that today is distinguished by the denomination Pair of Ferrara Igp.

    The Ferrara couple has a unique shape that differentiates it from other breads:

    two thin pieces of pasta joined in the center, to form the ciupeta, called in the Ferrara dialect;

    it is very crumbly, has a persistent flavor and a recognizable smell.
