For the line of products based on Blueberry and Berries we have chosen Azienda Agricola i Rodi, a family-run business located in Fanano on the Tuscan-Emilian Apennines, surrounded by green meadows and chestnut woods; the company philosophy is based on organic farming and a complete production cycle that includes separate waste collection, energy saving and photovoltaic systems, to ensure total respect for the environment. After the cultivation of blackberries, red currants, black currants, strawberries, raspberries and the subsequent harvest (to which we add the bilberry, not cultivated but wild), we move on to the transformation in a small artisan laboratory also located near the company: it is one of the few companies that can certify blueberry-based products from the Modenese Apennines with the mark of the Modena Chamber of Commerce, to ensure the origin and high quality of the fruit.

The bilberry, or wild blueberry, is a completely spontaneous fruit, which is neither sown nor cared for by man; it can be found in the areas of Northern Europe and, in our case, in the Modenese Apennines above 1500 m asl: it will later be certified as "Biological Blueberry of the Modenese Apennines". This fruit has an intense bluish color on the outside with redder shades on the inside of the pulp and needs climatic conditions characterized by an alternation between cold and snowy days and others that are longer and sunnier; these small fruits also ensure a very high content of anthocyanins (almost 8 times more than the cultivated blueberry!) and polyphenols, which perform important antioxidant and anti-inflammatory activities. Unlike the cultivated blueberry, it is a more artisanal product, harvested completely by hand, and which is always genuine and with very intense flavors and aromas.

Organic Blueberry Compote from the Modenese Apennines (trademark registered with the Modena Chamber of Commerce), created between Sestola and Fanano by transforming the wild blueberry harvested in the area and adding only organic grape juice and a small amount of pectin, without sugars added! It has a dark purple color with a medium-dense consistency, with the unmistakable and slightly pungent aroma of Blueberry and a fresh, sweet taste with slightly sour nuances.

Its pairing is perfect with soft bread or rusks, but also as a sweet filling of Piadina Romagnola Igp; we recommend combining it with medium-aged and seasoned cheeses such as Parmigiano Reggiano Dop 24-30 months, or soft such as Squacquerone di Romagna Dop and ricotta. Since there are no added sugars, it is suitable for low-calorie diets or for people intolerant to sugar.
