Saffron, nicknamed "Red Gold", was already linked to material and above all spiritual wealth since ancient times. Only recently, however, has interest in saffron rekindled, with the birth of small crops and growers' associations. Precisely in this way, the Saffron of the High Bolognese Valleys is created and certified, used for these delicious Saffron Biscuits.

These biscuits were born from the idea of using saffron petals, completely edible: it is in fact the least valuable and least known part of the flower, but no less good and tasty. The sweet-salty contrast given by the maple syrup and Cervia salt enhances the flavor of the petals even more, making these artisanal biscuits truly unique! The "Saffron of the High Bolognese Valleys" used for these unusual and excellent biscuits is grown between Monghidoro and Loiano in the upper Bolognese Apennines, in a natural, wooded and uncontaminated landscape, by the Marco Lelli farm and can boast the title of "Product Mountain". All the processing phases of this precious spice are carried out with traditional methods without the use of chemical fertilizers or pesticides. The flowers are harvested strictly by hand early in the morning, before they are opened, then the brushing takes place (extraction of the stigmas from the flower) and drying at low temperatures. All these operations must be carried out within the day to enhance all the qualities of the saffron.

Evidence has emerged that demonstrates how the components of the saffron used in the Saffron Biscuits that we propose (contains essential oils, phytosterols and glycosides, calcium, phosphorus, sodium, magnesium, iron and manganese, vitamins C and B and carotenoids) have antioxidant properties and which are therefore particularly useful in metabolic syndrome. The active ingredients contained have a beneficial role in age-related macular degeneration and may also have a therapeutic role in depressive disorders and Alzheimer's disease. Finally, the analgesic properties of this spice have been reflected in both childbirth pain and premenstrual syndrome.
