The production area of the Amarene Brusche is limited to the municipalities in the province of Modena and in some hilly-mountain municipalities in the province of Bologna; the territories of this area are particularly suitable for the cultivation of the fruit. The Extra Jam of Amarene Brusche di Modena IGP is a historical and traditional product of the Modenese gastronomic culture and, thanks to numerous writings and documents, we can trace its birth to the Renaissance period; some written testimonies in fact tell of this jam of "sour cherries" or of pies and cakes filled with jam of "sour cherries". The creation of this excellent processed product is due to the fact that the large availability of black cherries in a very short time makes them difficult to store and, consequently, difficult to market fresh; in order not to lose the peculiarities of a product of this level, their use is favored in preserves, jams, puddings, cakes and syrups. With the European Igp recognition, the finished product is subjected to very stringent quality controls, in order to constantly ensure a high-level food.

Characterized by the peculiar sour taste, which clearly distinguishes it from other jams, the "Amarene Brusche di Modena PGI" jam has a dark red color, tending to brown and an intense and unmistakable aroma; another peculiarity is certainly the percentage of fruits used for its production: it must correspond to the minimum proportion of 170 g per 100 g of jam. Its only ingredients are black cherries and sugar, with no added pectin, no preservatives, no additives. A real regional excellence!

Ideal if used for the preparation of raviole and pies, but it can also be enjoyed as a dessert at the end of a meal; very popular, moreover, in combination with ice cream or on ricotta. One of the most famous desserts of the Modenese tradition is certainly the Amarene tart, which combines the sweetness and softness of the shortcrust pastry with the acidulous and intense flavor of the Amarene Brusche: unmissable.
